This fast-growing 73-unit chain offers up a variety of dishes inspired by the cuisine of Northern Mexico’s Rio Grande, Southern Texas and New Mexico. Flour tortillas are skillfully handmade all day long and stuffed with fire-grilled chicken or steak, or with pulled chicken breast or signature Cafe Rio Sweet Pork Barbacoa (here). If it’s not a burrito that you crave, you can order a salad made with cilantro-lime rice, beans, and your choice of meat, and then have it topped off with a drizzling of this delicious Creamy Tomatillo Dressing, which you can now duplicate yourself in a matter of minutes for your own home salad masterpieces.

1 cup mayonnaise
2 medium tomatillos, quartered
¼ cup chopped cilantro
1 tablespoon minced garlic
1 tablespoon minced jalapeño (½ jalapeño, seeded)
1 pkg. Hidden Valley Ranch Salad Dressing & Seasoning Mix (regular or buttermilk)

How to prepare
  1. Combine all of the ingredients in a blender and blend on high speed until the jalapeño and garlic are well chopped up, about 30 seconds.
  2. Pour the dressing into a container with a lid and chill for about 30 minutes before use.
