Here in Apple Country, every family seems to have a cherished apple cake recipe. This moist,

heart-healthy version is a fall favorite with my family.

Ingredients:

1/2 cup sugar

1/2 tsp ground cinnamon

3/4 cup chopped walnuts, divided

4 cups apples, peeled and diced

1 cup sugar

11/2 cups flour

11/2 tsp baking powder

1/2 tsp salt

2 eggs, well beaten

3/4 cup low-fat milk

1/4 cup butter, melted

1/4 cup canola oil

Confectioner’s sugar, for dusting

Directions

• Preheat oven to 350 degrees.

• In a small bowl, mix together sugar, cinnamon, and ½ cup walnuts.

• Grease a 9-by-13-inch pan and fill with diced apples. Sprinkle apples with cinnamon mixture.

• In a bowl, stir together the flour, sugar, baking powder, and salt.

• In a larger bowl, combine the eggs, milk, butter, and oil. Add the flour mixture and combine until smooth.

• Pour the batter over apples, allowing time for it to settle between the apples. Sprinkle with remaining nuts.

• Bake for about 1 hour or until a toothpick comes out clean.

• Before serving, lightly sift powdered sugar over top of cake.

If the apples are sweet, there’s no need to sprinkle them

with sugar before adding the cake batter.
