A healthy way to get some essential nutrients into your diet. Just serve this

chicken & sauce with mashed potatoes or fettuccine noodles. You can

substitute spinach with broccoli & add fresh basil and cherry tomatoes.

Absolutely delicious!


1 ½ pounds skinless, boneless breasts sliced into ½” filets

2 tablespoons butter

¼ teaspoon pepper

1 small yellow onion, diced

½ cup chicken broth

4 large garlic cloves, minced

1 cup half & half

8 ounces mushrooms, sliced, optional

½ teaspoon garlic powder

3 ounces fresh spinach, coarsely chopped

½ cup parmesan cheese

2 tablespoons flour

½ teaspoon salt

Freshly ground pepper & salt to taste


1. Preheat your Instant Pot by selecting the sauté feature. When the word

HOT appears on the display; immediately add the butter. Once melted;

immediately add & sauté the onions for 3 to 4 minutes then, add the garlic;

continue to sauté the ingredients for half a minute more. Add chicken broth

followed by pepper, garlic powder & salt; give the ingredients a good stir

until mixed well and then, add the chicken & mushrooms.

2. Cover and secure the pot the lid. Pressure-cook the ingredients on manual

setting for 6 minutes. Once the cooking cycle completes; wait for 10 minutes

and let the pressure to release naturally then, release any leftover pressure

using the quick release feature.

3. Carefully remove the lid. Place the chicken on a large platter using a pair

of tongs. Cover it loosely with aluminum foil. Select the sauté feature of your

Instant Pot & heat up the half and half in a measuring cup in the microwave

for 45 seconds, until warm. Add flour into the half and half, whisk until

completely smooth. Whisk this mixture into the Instant Pot and continue to

stir the ingredients until the sauce thickens. Add spinach followed by the

parmesan cheese. Sprinkle with pepper and salt to taste.

4. Serve the prepared sauce with the cooked chicken. Enjoy.
