Swordfish Steaks

½ Cup butter

2 Tbsp fresh coriander, chopped

1 Tbsp parmesan, grated

4 swordfish steaks

1 Tbsp olive oil

4 zucchini (courgettes), cut into long slices

1 red pepper, gartered


1. Preheat barbecue to high. Cream the butter until soft. Then, add the

coriander and parmesan. Mix to combine, press into a butter pot and set


2. Lightly oil barbecue grill bars, brush fish steaks with oil, place on grill bars

and cook 34 minutes each side according to thickness.

3. Brush vegetable with oil and place on grill, cook for 3 to 4 minutes until


4. Serve vegetable and swordfish topped with a dollop of coriander butter
