Chicken Zucchini Quiche

With only four carbs per slice, this egg-based quiche is the perfect healthy

brunch option for your family or a group of friends. The crust is made from

scratch, and only has four ingredients - almond flour, an egg, coconut oil, and

a little salt. The filling is tasty ground turkey chicken with salt, pepper, and

oregano, and baked with eggs, heavy cream, and tender grated zucchini.

Ingredients:

Crust

1 cup almond flour

½ big egg

1 tablespoon coconut oil

Pinch of salt

Filling

½ pound ground chicken

3 big eggs

½ medium grated zucchini

¼ cup heavy cream

½ teaspoon dried oregano

Salt and black pepper to taste

Directions:

1. Preheat your oven to 350-degrees F.

2. Pulse a little salt and almond flour together in a food processor.

3. Add in coconut oil and ½ egg.

4. Pulse until you get a dough.

5. Spray a 9-inch pie dish and press in the dough to make the crust.

6. Stick in the fridge for now; crust does not need to pre-bake.

7. Cook the ground chicken in a skillet until browning begins.

8. Remove from heat.

9. In a bowl, whisk eggs.

10. Add cream, salt, pepper, and oregano, and mix again.

11. Add chicken and grated zucchini.

12. Pour into the pie crust and bake for 30-40 minutes.

13. Center will be firm, while the crust should be golden.
