Keto Chicken Drumsticks with  Pork Rind Breading

Chicken drumsticks made dark meat, which is the most tender part of the

chicken. You’ll be marinating them in some Greek yogurt, salt, and jerk

seasoning. After 15 minutes, the chicken is breaded in a mixture of crumbed

pork rinds (yum!) and unsweetened coconut. After a drizzle of olive oil, into

the oven they go. You’ll want to check on them after 20 minutes to make sure

the coconut isn’t burning. If the coconut has turned golden, turn down the

oven before flipping and baking for another 20 minutes. One serving is two

drumsticks.

Ingredients:

  • 8 large chicken drumsticks
  • ⅓ pound pork rinds
  • 8 tablespoons plain Greek yogurt
  • 3 ¼ ounces unsweetened shredded coconut
  • 4 tablespoons olive oil
  • 2 tablespoons jerk-style seasoning
  • Pinch of salt

Directions:

1. Preheat your oven to 350-degrees.

2. In a bowl, mix yogurt, jerk seasoning, and salt.

3. Move to a plastic bag and add drumsticks, with skin intact.

4. Shake well, and stick in the fridge for 15 minutes.

5. When ready, take out the drumsticks and throw out the marinade.

6. Put chicken in a new bag.

7. In a food processor, blend pork rinds till they are like breadcrumbs.

8. Blend coconut with rinds until incorporated.

9. Put this “breading” into the chicken bag and shake until coated.

10. Grease a baking dish and put in chicken.

11. Drizzle olive oil over chicken and bake for 20 minutes.

12. When 20 minutes has passed, check on the chicken. If the breading is already golden, turn down the oven to 300-degrees. You don’t want the coconut to burn.

13. When you’ve flipped the chicken, cook for another 20 minutes.

14. When chicken has reached 165-degrees and the breading is golden, they’re good to go!
