Healthy Dessert Blackberry Lemon Roll cake

Warm and bursting with lemon flavor, these rolls would be just like that.

However, there’s also an amazing blackberry sauce sweetened with stevia

that makes these sweet rolls a home run. The process might look a bit

intimidating, but just take one step at a time, and it’s actually pretty simple.

You make the filling and sauce first, and then the dough. You roll that out,

spoon on filling and sauce, and then roll it back up. After cutting, bake for

just 24 minutes or so. A perfect cold-weather dessert with summery fruity

flavors!

Ingredients

Dough

  • 2 cups part-skim mozzarella cheese
  • 1 egg
  • 1 cup fine almond flour
  • ¼ cup stevia blend
  • 1 ¼ teaspoons baking powder
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon xanthan gum

Filling

  • 4 ounces room-temp cream cheese
  • 2 tablespoons stevia blend
  • 2 tablespoons room-temp butter
  • 2 teaspoons lemon zest
  • 1 teaspoon lemon juice
  • 1 teaspoon pure lemon extract
  • ½ teaspoon pure vanilla extract

Blackberry sauce

  • ½ cup frozen blackberries
  • 2 tablespoons stevia blend
  • 1 tablespoon water
  • 2 teaspoons lemon juice
  • ¼ teaspoon xanthan gum

Directions

1. In a mixer, blend all the “filling” ingredients together and cover for now.

2. To make the sauce, mix xanthan and stevia together in a pot.

3. Slowly whisk in water and lemon.

4. Turn the heat to medium-low and add blackberries, stirring.

5. Keep stirring and once the sauce has reached a simmer, take the pot off the stove.

6. Now for the dough. Preheat your oven to 350-degrees.

7. Prepare a 9-inch circular baking pan with a coconut-oil based spray.

8. Cut out two large pieces of parchment paper.

9. Get out a medium-sized saucepan and fill with 2 inches of water.

10. Put on the stove and set to high.

11. As soon as the water is simmering, turn heat to low.

12. In a bowl (that you know will fit on the saucepan as a double boiler), mix almond flour, xanthan, baking powder, and stevia blend until combined.

13. Add vanilla and egg to make a thick batter.

14. Add cheese and put the bowl atop the simmering pot.

15. Stir constantly to melt the cheese and mix with the batter.

16. Once the cheese is totally melted, move the dough to one of your pieces of parchment paper.

17. Knead for a minute or so to make sure everything is mixed completely.

18. Mold dough into a rough rectangle, and then layer on your piece of parchment paper.

19. Roll out with a rolling pin to get a rectangle about 12x15 inches.

20. Get your filling and spread over the dough, with ½-inch of the edge part of the dough bare.

21. Spread blackberry sauce atop filling.

22. Start with the long side of the rectangle, and roll into a log, sealing on the edges.

23. With a sharp knife, cut log into 8 pieces to get your rolls.

24. Put in the circular baking dish and bake for 24 minutes.

25. If the dough has turned golden, the rolls are ready!
